Sautéed Pumpkin Leaves

  • 6 cups Pumpkin leaves, chopped
  • 1/2 cup onion, chopped
  • 1/2 tablespoons garlic, minced
  • 6 teaspoons olive oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3 ounces dry white wine

Heat oil in saute pan and add onion and garlic. cook 2-3 minutes, add leaves and saute until leaves turn bright and add salt and pepper, then deglaze with white wine, cook another minute and serve.
