  • 4 lbs. beef osso bucco
  • 1 stick butter
  • 1 large onion, finely chopped
  • 1 medium head of garlic, minced
  • 3 tbs. fresh oregano
  • 1 1/2 cups beer
  • 1 quart tomato sauce
  • salt and pepper to taste

Preheat oven to 325 degrees. Sprinkle salt and pepper on both sides of osso bucco. Set aside on counter. On stovetop in a dutch oven, melt butter and add garlic and onions. Saute until onions are tender. Add osso bucco to pot and sear on both sides. sprinkle dried oregano on meat. Pour in beer and tomato sauce. Cover and place in oven. Cook until meat is fork tender (3 to 4 hours). Serve with potatoes, pasta or rice.
