  • 1 lb. bulk pork sage sausage
  • 1 cup chopped arugula
  • 1 1/2 cup shredded cheddar cheese
  • 1 cup milk
  • Salt & pepper to taste
  • 6 eggs
  • For crust:
  • 1 box crushed crackers
  • 1 cup melted butter

Preheat oven to 350 degrees.

In a pie pan or square (8x8) baking dish, cover bottom with crushed crackers. Pour melted butter over crackers and set aside.

Cook sausage until browned and drain off fat. Scatter cooked sausage over the crushed cracker/butter base in your pan. Then layer on shredded cheese and arugula. Whip eggs, milk, salt and pepper together and pour over ingredients in pan. Transfer to oven and bake for 45 minutes (or until quiche is browned and no longer jiggly in the middle).
