- 2 lb sweet potatoes, cubed
- 1/2 cup cream
- 1/2 cup butter
- 1/4 cup maple syrup or honey
- 1 tsp. salt
Boil potatoes in salted water until tender. Drain potatoes and pour in cream, butter, syrup and salt. Blend in mixer on medium speed or mash with a potato ricer. Can be eaten as a basic side or used as filling for casseroles and stuffings.
