  • 2 lb. eggplant
  • 2 tbs. olive oil
  • 3 cloves minced garlic
  • dried herb of choice
  • Grated/crumbled goat cheese or parmigiano cheese
  • salt and pepper to taste

Slice Eggplant into 1/4 in slices. Drizzle with olive, salt, pepper, minced garlic and dried herb of choice and then toss. Put under broiler on high for 5 to 7 minutes until fork tender.

Remove from broiler and sprinkle with crumbled goat or shredded parmesan cheese. Return to broiler and broil until cheese melts (about 1 minute)
